Chef Neftali Torres

Chef Torres is a rags to riches success story within the Baily's organization. Starting with the company over ten years ago as a dishwasher, Neftali has been an observant eye and quick learner as he gleaned the education opportunities presented by the handful of talented chefs to work for the Baily's. With whom ever he worked, Neftali was always the 'go to guy' that could get the job done quickly and accurately, many times better and faster than the chef. In 2005, opportunity came knocking to become chef of Old Town Dining, LLC and be in charge of not one but two kitchens, Baily's and Front Street Bar & Grill.

Chef Torres is intimately aware of ingredient quality being a crucial first step in preparing quality gourmet food. To that end he strives to bring in to the restaurant only the freshest ingredients. The charge at Baily's has always been to prepare California/Continental cuisine for the guests and that is a tough call for any chef as it allows for interpretations of any cuisine in the world. Chef Torres excels at this aspect of the job with dishes like Chili Stuffed Chicken (Mexico), Ahi and Albacore Salad (Japan), Smoked Duck Spring Rolls (China), and Carpaccio (Italy).

Finally, in 2005 Neftali was recognized by restaurant writers at the Great Chefs of the Inland Empire competition. His dish of medallions of veal tenderloin layered with oyster mushrooms, brie cheese, and caramelized Maui onions finished with a Madeira wine reduction sauce took top honors with the Best Entrée award.
